Professional Sommelier Diploma Project

Explore tea’s place in modern mixology. Create bold, balanced cocktails and mocktails making tea the star performer. Learn flavour pairing and techniques of the mixologist.

Project Snapshot

From shaken matcha to infused spirits, discover how tea transforms cocktails and creative drinks. Explore balance, texture, and aroma across both alcohol and alcohol-free options.

This unit offers a professional yet playful introduction to using tea in mixed drinks. Whether you’re a bartender, tea sommelier or creative host, you’ll learn how tea contributes aroma and structure to your drinks menu.

You’ll explore brewing, cold infusion, flavour balance, tea syrups, spirit infusion and even advanced techniques like flash extraction and fat-washing. Each technique is explained with practical tips and flavour logic. You’ll learn how tea can enhance mouthfeel, soften bitterness, and bring complexity to drinks served hot or cold, shaken or stirred.

You have the opportunity to join professional mixologist William Campbell-Rowntree in a 1 hour Q&A session to get the benefit of his experience and explore ideas or clarify technique.

On completion
At the end of the unit, you’ll complete a multiple-choice quiz. Once passed, you’ll receive a digital badge to demonstrate your understanding of tea in mixology. It supports both hospitality professionals and tea creatives in building confident, thoughtful use of tea in modern drinks culture.

Qualification
This unit is an optional unit in  the Tea Sommelier Award
