Mastering Afternoon Tea
Get inside the rituals, service, business and design of a successful afternoon tea. From scones to strategy, explore how this tradition evolved and how to make it work today.
Outline
This unit offers a practical and cultural guide to delivering a formal Afternoon Tea, a beacon of sociability, celebration and indulgence in the hospitality world. You’ll trace its evolution from the aristocracy through Victorian parlours to modern five-star hotel lounges and along the way, you’ll find social rituals, gender control and class distinctions. The business of Afternoon Tea includes visual presentation and social media appeal as well as creating atmosphere and delivering a professional service. You’ll also go behind the scenes into menu design, tier pacing, pricing, comp sets and themed events. This is about how to run a profitable Afternoon Tea while keeping the guest experience at its heart.
Live Q&A session
This unit offers a live online Q&A session with Olivia Campbell who manages the Afternoon Tea at Raffles at the Old War Office, one of London’s grandest hotels. It is your opportunity to benefit from her experience and ask advice.
On completion
At the end of the unit, you’ll complete a multiple-choice quiz.
