Olivia is the Restaurant Manager of The Drawing Room and Pillar Kitchen at Raffles London at The OWO. Originally from Limerick in Ireland, Olivia is a beacon of Irish hospitality and has been paving her way through some of London’s finest establishments over the last 6 years, including Mandarin Oriental Hyde Park, Jumeirah Carlton Tower and Sofitel St. James where she specialised in Afternoon tea at The Rose Lounge and gained it award winning status.
Olivia’s background in hospitality started with a BA in Business & International Hotel Management from the esteemed Shannon College of Hotel Management. She completed an internship at The Fairmont St. Andrews and then in London put her skills and knowledge into practice. This finally brought Olivia to the opening team of Raffles London at OWO – the magnificent conversion of the Old War Office, where she now manages both The Drawing Room and Pillar Kitchen. Here she has recently launched the signature Secrets and Spies Afternoon Tea, spotlighting the incredible women of history who worked inside the Old War Office during both World Wars.
